In Memory

Myrna Sue Day (Elliott) - Class of 1958

Sue Elliott, dear wife, beloved mom, fun grandma, and loyal friend passed away on March 9, 2020 from a lengthy illness taking a piece of each of her friends and family members hearts with her. Sue was born on February 8, 1940 to Morris R and Wanda Mourtsen Day in Montpelier, Idaho. She was the youngest of 3 children and the apple of her daddy’s eye. Her dad passed away shortly after her 2nd birthday. At the age of 13 she was blessed to gain a stepdad, Melvin Lauridsen, whom she loved very much.

Mom met Dad at a drive-in in Montpelier, Idaho. Theirs was a love story most can only wish for. They were each other’s better half; they were best friends and had 43 wonderful years of marriage and adventures until Dad’s death in 2003. Mom was devastated by the loss of her love and missed him dearly. We can only imagine the fantastic reunion taking place.

Mom and Dad were blessed with 2 children, Kathryn and David. Mom loved being a mom and she was devoted to her family. She was a constant presence in her children's and grandchildren’s lives. It did not matter which role she played from PTA president to den mother, mom embraced every chance she had to participate in the lives of her kids and their friends. Mom had the fun house on the block. Everyone felt safe and welcome in her home.

As much as she adored being a mom, she really was a devoted grandma. She had a unique and special relationship with each of her 7 grandkids. She was the type of grammy that knew everything about each of her grandkids, from their teachers names to what subject they were studying or who liked who at school, she was involved in all of their lives and every one of her grandkids have part of their grammy in their hearts and souls. They are her legacy and will miss her deeply.

After mom raised her kids, she re-entered the work force. She was the Administrative Assistant to the Dean of the School of Business at Salt Lake Community College. She loved her job and the people she worked with. Mom was the friendly face of the Deans Office. She greatly enjoyed her time at the college and retired from SLCC after a happy 26 year career.

In retirement, Mom liked to keep busy. She was never one to just sit, she had to be doing something. She was a member of two Red Hat groups and enjoyed the many activities she participated in with her friends. She was a member of the Murray City Ladies Guild and so enjoyed the friendships she formed within this group. She loved to read, especially James Patterson or Patricia Cornwell novels. Her favorite TV channel was the Food Network, she especially loved the Pioneer Woman and in her later years, her day was structured around “Ree and the ranch.” If there was anything she enjoyed more than PW it was a good ice cream cone or an In and Out hamburger. We are convinced she would have one for every meal of every day if given the chance.

Sue is survived by her children, Kathryn (James) Burke, David (Nicole) Elliott, her grandchildren Andrew (Traci) Burke, Matthew Burke, Shiloh (Tammie) Elliott, Emily Burke, Alyssa Elliott, and Carter Elliott, and brother Richard (Elizabeth) Day. She is preceded in death by her beloved husband George, her adored grandson Sean Burke, her parents, a brother Robert Day, niece Laurie Day and best friend Gloria Holt. We would like to express our gratitude to the staff at Summit Senior Living who took exceptional care of her the last month of her life and Utah Home Care and Hospice and her special angel, Erin Gates, who lovingly cared for mom and made sure she was comfortable and peaceful as she left this life and entered heaven, thank you.
